Here's the recipe for Scouse, well the way I do it anyway - every Liverpudlian has a different way ...
You will need (all measurements are approximate): 2 lb meat - either braising steak, shin beef or mutton chops 4 lb potatoes 5 or 6 onions 3 or 4 good sized carrots Salt and Pepper to season
Cut the meat into cubes and seal it (by browning) Peel and slice the potatoes, onions and carrots Get a big stew pan and line the bottom with some of the potato, then add some meat, then some onion, then some carrot - layer it until everything is in the pan Add a little salt and pepper (teaspoon of each) Cover all the ingredients with water (some people use stock) And slow cook over a low heat for 3 - 4 hours
Serve with chunky bread and beetroot, and a glass of light ale.
