now i dont like xmas pudding but these are nice 350g madeira cake crumbled into fine crumbs, melt 150g plain cooking chocolate in a heat proof bowl set over a pan of simmering water, remove bowl and add the cake crumbs 50g each sultanas,chopped glace cherries, and mixed peel. 3tbsp of brandy, mix well, using your hands roll the mixture into 12 walnut size balls. chill for about 10 mins, melt 110g white chocolate and poor a little over the top of each ball place a peice of a glace cherry on top allow too set before serving..
