I actually held a baby for ransom until I got this recipe off the woman! Haven't actually got around to making it myself but it is fab! Sift together 8 oz plain flour 1 tsp Baknig powder 1 tsp Bicarbonate of soda 2 tsp ground ginger 1/2 tsp Salt Then Stir in 6 0z light muscovado sugar 8 oz carrots grated 2 pieces stem ginger in syrup (chopped) 1 oz root ginger (grated) 2 oz seedless raisins Then mix with 2 medium eggs (beaten) 3 tbsp corn oil Juice of one orange Put it all in an 8 oz cake tin and bake at 180 degrees for 1 hour 15 mins. Cool and for the icing on top 8 oz low fat soft cheese - beat til soft 4 tbsp icing sugar 1 tsp vanilla essence Also can put bits of crystallised ginger on top instead of a cherry!!!
