Okies , certainly not the most complicated of meals but me and the kids loved it , and more importantly it was bloomin quick ! ;D
Omelette with Hamm , Rocket , Watercress, Spinach. (Using Parmesan cheese)
Serves 1-2 Adults
Ingredients
3 eggs beaten 2 tsp's Butter 3 slices of thick ham Good handfull of Rocket , Watercress, Spinach (Sainsburys do combo packs) 1oz of Parmesan finely grated Salt and ground pepper
Instructions
Melt butter on low heat Stir in the ham ( chopped) and fry for approx 2 mins. In a mixing bowl mix the eggs , rocket, spinach, watercress and parmesan together thorougly Poor the egg mixture into the frying pan and even out the mixture across the pan. Cook unto it just starts to turn light brown.
Either roll it up and cut into pieces , or serve as is .

Greenery more for texture / aesthetic value , but nice all the same.

[glow=orange,2,600]OK, here's a quick meal. It takes a bit more than 10 minutes, but you don't have to do much...
Smelly Spaghetti! (spaghetti con aglio e olio)
You will need: Loads of olive oil Fresh chillis or crushed chillis (as many as you can take) About 5 large cloves of garlic Enough spaghetti for one person (well, enough for two just in case you're really hungry) Lots of salt Black pepper LOADS AND LOADS of freshly grated paremsan cheese
What to do: 1. Get a load of water boiling in a large pan 2. Warm up the olive oil in a heavy based frying pan over a very gentle heat (use enough oil to give the bottom of the pan a healthy covering - so it's about 5mm deep). 3. Add the chillis to the oil and warm 4. When the water is boiling and loads of salt and a bit of oil - get the spaghetti cooking 5. At the same time, crush the garlic into the oil with the chilli - don't allow the garlic to brown; keep the heat really low so as it jsut cooks nice and gently 6. When the spaghetti is cooked, drain it well and toss with the oil/garlic/chilli 7. Serve with black pepper, a bit more salt and tonnes and tonnes of parmesan cheese
I wouldn't leave the house for a day or so after eating this[/glow]
